Tegan Mansouri, PhD, RDN, is the nutrition science program director at UB. After becoming a registered dietitian in 2017, she decided to continue her graduate studies at UB where she worked under the guidance of Jennifer Temple. Her research focused on eating behavior, including the impact of food reward and impulsivity in adolescents and adults.
Her doctoral work combined innovative qualitative and quantitative methodologies to explore eating patterns among emergency medical service (EMS) providers—a population known for their critical yet demanding role in society. During her postdoctoral research, Mansouri continued this work, striving to develop practical interventions aimed at improving the well-being of EMS professionals.
Mansouri’s work exemplifies her passion for blending research, education, and public service to make a meaningful difference in both her profession and her community. Through her focus on effective teaching methods and evidence-based practices, she aims to equip her students with the knowledge and skills needed to excel in the field of nutrition.
